Chymosin or rennin sometimes known as rennet (Cheese making strategies)

Milk production
by its actual process
means lots of baby cows around
the farm
that’so mother cow has
her lactation at full throttle
and the dairy boys can
take advantage
and of course the bottle

though now it comes in cartons
no matter its the same
so what to do with unwanted calves
you got it, yea the same
idea to create a market
for them and clearly they
all do have a stomach
and thus can pay their way

the lining of the abomasum
contains the chymosin
also known as rennin
which, does underpin
the true coagulation
in cheese making and so
slaughter the little baby
which no one needs to know

its, all done quietly behind
closed doors

incidentally cats and pigs and seals
produce this stuff
but there are millions
of baby calves
but they they still can’t get enough
of all this precious
chymosin so what they went and did
was grow it on Aspergillis niger
really in a bid

to create another avenue
in which to take a source
which could be considered purer
with really the same force
Recombinant Chymosin its called
GM but no compound
left at time of precessing
well none that could be found

in times gone by
the First people
discovered coagulation
was possible from the milk thistle
which has a close relation
it contains a sort of chymosin
and can be made today
it was found best for soft cheeses
and yogurts I’ve heard say

so it wasn’t really necessary
to kill these baby calves
but the industry is after making money
and won’t do things by halves
calf chymosin is out there
and many makers use
recombitant is out there too
I suppose that is good news

for some but not for cows alas
who are pregnant all their days
that’s until they are worn out
when they then enter the phase
of being fit for slaughter
when production is seen to be
lower than is profitable
its the slaughterhouse they see

so now you know the story
you can all decide
whether you want the glory
or prefer for them to hide
whether its animal rennet
or its bacteria grown
the fruits of life are
complex
more so than you had known
